pumpkin cooking

Last weekend, I made a couple of loaves of pumpkin bread for various events, and still had about half the can left. So today I made pumpkin bread and pumpkin cheesecake, both recipes from the Joy of Cooking because I'm not creative about looking for recipes. For the bread, I threw in whole cranberries instead of raisins, which turned out nice, but next time I would chop them. The cheesecake is still chilling, and I'm not entirely sure what to do with it, but I may end up freezing it for some other day.
For dinner, I took advantage of the nice weather and grilled dinner. The squash turned out to be just about the yummiest I ever had. I split an acorn squash, scooped out the seeds and strings, and put the halves cut side down on the hot grill for a few minutes, just until they got grill marks. Then I turned them over, rubbed them with a mixture of 1 Tblsp butter and 1 tsp chopped garlic, and let them cook on low for a while. I took them off when they were nice and soft, and they had caramelized slightly on the shell side. It was yummy and sweet and with the garlic and butter... ooh. Yum. Highly recommended.
